My husband loves tripe (I don't). This is a sort of
Menudo type dish. First I par-boiled the tripe and while it was cooling I sauteed about half a chopped onion and a chopped bell pepper until tender. I then threw in 5
small tomatoes cut in half and cooked them until soft. I then added one container of chicken stock and 2 tbsp
Caldo chicken/tomato
bullion. A few shakes of
Worcestershire sauce, chopped fresh oregano, thyme, a small splash of
sherrie vinegar, black pepper, a couple handfuls of frozen corn (you can use fresh if you have it on hand)
I cut up the tripe into bite size pieces.
Add it to the broth and bring up to a
boil then turn down to a simmer. Simmer until tender about 2 hours. Taste and adjust seasonings. As you can tell I just throw things in, whatever I have on hand. You can add whatever veggies you like, whatever seasonings..

I could not have even attempted that dish. Kudos to you!
I think that is why I don't like it.. it stinks when par-boiling and puts me off of it. I like the broth.
