I tried to make Sweet Potato Fries, I cut the sweet potatoes (with the attachment on the mandolin) I think they should have been thicker. I par-fried them then fried them again because that is what is supposed to make them crisp. They didn't crisp so I stuck them in the oven for about 20 minutes to see if that would help... no just kind of greasy and limp but they tasted good while they were hot. Not exactly the like the fries from Chefferies but they were good. That was my first attempt at fries.. I've never made home made fries before. Maybe it's different with sweet potatoes than regular potatoes. Ideas?
