GUAVA CHIFFON PIE

Here is an easy relateivly low fat desert.

Graham Cracker Crust(I cheated here and used a ready made crust )

1-8oz cream cheese, fat free or low fat will work fine

1-12 oz frozen guava juice or any tropical juice or juice combination

1-12oz can evaporated skim milk-very cold

2- packets plain gelatin

2/3-3/4C sugar depending on how sweet the juice is.

1/4 C lemon juice

Heat 1 C of the juice and dissolve the gelatin- let cool

In a mixing bowl cream the cream cheese and sugar. Add the remaining guava juice, lemon juice and the gelatin mixture. Beat until well combined and smooth.

In another large bowl whip the cold evaporated milk ( I put the milk in the freezer for about an hour or until slushy) Whip until stiff peaks form.

Fold the whipped milk into the guava mixture - be sure to fold, if you mix it, it will deflate.

Put the mixture into the pie crust and chill until set.

It will make one very high 9" pie or 2 normal 9" pies..

It freezes very well .. you can also make it in a 9X13 inch pan.
