The icing also uses fresh strawberries and together with this cake it is delicious. This icing would be good on plain white cake too.
Fresh Strawberry Cake
1 package white cake mix
1 3oz. package strawberry jello
1 C vegetable oil
3/4C mashed fresh strawberries
Combine the cake mix with the jello. Beat in the rest of the ingredients beat until smooth. Pour into two 9 inch cake pans or cupcake tins.
Bake at 350 degrees for 30 minutes (15 for cupcakes) or until a toothpick inserted come out clean. Cool and frost.
Fresh Strawberry Icing
1/2C softened butter
1lb confectioner's sugar
1/4C mashed fresh strawberries
Beat the softened butter and sugar together until smooth. Add the strawberries and beat until combined.
Spread on cake or cupcakes as desired.
I think these recipes would be equally good using other berries or fruits. I'm thinking blackberries for my next cake.
