SUNDAY WITH MARLENA SPIELER-SWEET AND SOUR CUCUMBERS WITH FRESH DILL


This is a quick and refreshing salad that's light and tasty. It's also another Jewish/Japanese recipe. This is just like the Sunomono or pickled cucumbers that is served at all the sushi restaurants (but better). It's kind of like my mom used to make. This would be a great summer salad on a hot day with some of Marlena's Pumpernickel bread..recipe to follow.

SWEET AND SOUR CUCUMBERS WITH FRESH DILL
serves 4

1 large English cucumber, unpeeled thinly sliced
3 onions- I used one large onion
3 Tbs sugar
6Tbsp white,apple cider or Japanese vinegar
2-3 Tbsp water
3Tbs chopped fresh dill
splash of soy sauce
salt to taste

In a bowl mix together the sliced cucumbers and onion. Season with salt and toss together well. Let sit for about 10 minutes. Add the sugar,vinegar,water and chopped dill to the cucumber mixture. Toss together until well combined, the chill for a few hours tossing occasionally.

variations: add sesame seeds or chopped drained clams or baby clams.

I submitted this salad for the Oak Cafe's Jewish Menu. It really is a fantastic salad. I love the fact that it's in Jewish Cooking but tastes like what you get in a sushi restaurant. So true!
