SUNDAYS WITH MARLENA SPIELER-BROCCOLI AND CHEESE MINA
This is a delicious way to make broccoli. Lots of butter, garlic, onions and cheese!! How can that not be good. It's also a very simple dish to put together.
One head of broccoli cut into florets
1 onion chopped
green onions chopped
grated cheddar cheese
ricotta or cottage cheese
Parmesan cheese
garlic minced
butter
eggs beaten
matzo crackers
wet 2-4 (depending on how much broccoli you have) matzo crackers and lay them on the bottom of a baking dish. Blanch the broccoli until crisp tender, drain and distribute over over the matzo crackers.
Put cheeses and onions over the broccoli pour half of the egg over the cheeses, dot with half of the butter.
Wet the rest of the matzo crackers and place over the cheese and broccoli, pour over the rest of the egg and dot with the remaining butter and garlic.
Bake 25-30 min. until cheeses are melted and the matzo crackers are golden.
Yum! Garlicy buttery Matzo crackers over cheesy broccoli. I think even kids would eat this

Looks really good! I love creating dishes using vegetables like broccoli.
Wow! That is a very creative way to enjoy broccoli. I owuld have never thought to use matzoh-It's a great idea. Thanks for sharing.
