STILL GOING GREEN- GREEN TOMATO CAKE


This is a very good cake, moist and not too sweet. It is like a spice cake or maybe Zucchini cake but with tomatoes. In the recipe it says chopped tomatoes, I didn't know how small or large I was supposed to chop them. I did a rough chop then decided the pieces were too big so I put them in a food processor and pulsed them until they were more the size of about peas. I guess if you want chunks of tomatoes in your cake you can leave them larger.

Green Tomato Cake

4C chopped green tomatoes
1Tbs salt
1/2 C butter
2 C white sugar
2 eggs
2 C all purpose flour
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
1/2 C raisins (opt.)
1/2 C chopped walnuts (opt. or use any type nut you'd like- I used almonds)

preheat oven to 350 degrees

Place chopped tomatoes in a bowl and sprinkle with the 1Tbs salt. Let stand 10 minutes, place in a colander, rise with cold water and drain.. set aside
Cream butter and sugar, add eggs and beat until creamy
sift together flour, cinnamon, nutmeg, soda and 1/4 tsp salt. Add raisins and nuts to dry mixture, add dry ingredients to creamed mixture. Dough will be very stiff. Mix well
Add drained tomatoes and mix well. Pour into prepared 9x13 pan.
bake 40 to45 minutes or until toothpick comes out clean.

I frosted this with a browned butter cream frosting. It would also be good just dusted with powdered sugar.
This is a do again cake, really good.
