I had2 left over tomato slices,a handful of shredded cabbage, about a tablespoon of Adobo mayonnaise sauce and one tortilla from last nights fish taco dinner..not enough to really make much out of but it was perfect for my breakfast.
I grilled the two tomato slices, fried a couple of eggs put them on top of the tomatoes and topped them with the chili mayo and shredded cabbage. I used the left over tortilla to sop up the egg yolks.. YUM!
