This is one of the recipes that Shankari Stream of Consciousness.. demonstrated at one of her classes at William-Sonoma. It is the perfect blend of crunchy, sweet, spicey and salty. It is a great appetizer for the holidays and would make a great addition to a gift basket.

Coconut Roasted Cashew nuts
2Tbs peanut oil or vegetable oil
2 Tbs. honey
2C unsalted cashew nuts or any variety of nuts
1/2 shredded unsweetened coconut (desicated coconut can be found at Asian markets)
1Tbsp chili flakes or to taste
Salt and pepper to taste
Heat oil in a wok or large frying pan, stir in honey. After a few seconds add the nuts and coconut.
Stir-fry until both the nuts and coconut are golden brown. Add the chili flakes, salt and pepper.
Toss until all the ingredeints are well mixed. Serve warm or cold.
