ANOTHER RUM CAKE


I thought I'd rework the Chocolate Rum cake that my friend Nance made for our "Christmas name picking" at the begining of the month. This time I used yellow cake mix with vanilla pudding and nuts with butterscotch chips. It is really good!
Rum Cake
Oil and flour a bunt pan
Sprinkle nuts and chips over the bottom of the pan
1/2 C walnuts or pecans
1/2 C butterscotch chips
Mix all the ingredients until smooth:
box yellow cake mix
1 small box vanilla instant pudding
3 eggs
1/2 C oil
1 C water
Bake 1 hour (use a cake tester to be sure cake is fully cooked)
Glaze:
1C butter
1C sugar
3/8 C rum
1/8C water
Combine all ingredients in a sauce pan simmer 2-3 min.
Pour hot glaze over cake as soon as you take it out of the oven. It seems like a lot of glaze but it will all soak in. Allow cake to cool for 20-30 min before turning out onto a plate.
This is a great cake!!
