CHUNKY MONKEY

What do you do with over ripe bananas? You make these..
There used to be a restaurant called Bernice's years ago in the 5 points shopping center on Arden Way/Fair Oaks Blvd. It was owned and operated by Bernice Hagen one of the Sacramento Magazine's Dining Divas. It was one of the best restaurants and I was really sorry to see it close. After all these years this is my adaptation of one of my favorite deserts that I would have there.
Here is what you need:
Egg roll wrappers
bananas cut into thirds
brown sugar
chocolate chips (mini work best)
chopped nuts (optional)
sprinkle of Cinnamon or nutmeg (optional)
water for sealing the edges

Lay out the egg roll wrapper and brush water along all the edges, put about a tsp or more brown sugar in the middle of the wrapper place the banana on top. Sprinkle with mini chips and Cinnamon and roll up as you would a burrito. Make sure all edges are well sealed. After all the bananas are wrapped fry in hot oil until golden brown.
Serve warm or at room temperatures with ice cream.
Another option is to spread some peanut butter on the bottom of the wrapper then add the rest of the ingredients and roll up and fry.
