CEDAR PLANKED WILD SALMON WITH YOGURT SAUCE

Another dish from Dionisio Esparas one of the instructors at the Food Co-op. He does an awesome grilling class. This was one of his recipes.

1 piece of untreated cedar plank (1.5in X 7 in.)
2lbs wild salmon filet with skin on
1Tbsp olive oil
2Tbs mild chili powder
1/2tsp garlic powder
2tsp brown sugar
1/2tsp sea salt
1tsp dried oregano
1/4tsp cayenne
1/4 tsp fresh ground pepper
Soak cedar plank according to directions ( 1-2 hrs submerged in warm water.) Preheat grill to medium high.
Remove any bones from the salmon filet. Rinse filet to remove any loose scales and pat dry with paper towel. Brush with olive oil and set on plate.
In a small bowl combine the remaining ingredients and mix well. Coat top of sides of salmon with spice rub. Let sit 15-20 minutes at room temperature.

When ready to cook, preheat cedar plank directly over heat until it just starts to smoke. Carefully turn over the plank and set salmon filet on top of the plank with skin side down. Cover grill and cook Salmon for 30-40 min or to desired doneness(filet should feel firm to the touch). Cedar plank will smoke and char as it remains over direct heat.

Using a large spatula carefully remove salmon from plank leaving the skin on the wood. Serve hot salmon with your favorite salsa or a cool yogurt sauce.

Herbed Sesame Yogurt Sauce
2Tbsp toasted sesame seeds
1/2 C each yogurt and sour cream
1Tbs extra-virgin olive oil
2Tbs fresh lemon juice
2Tbs each finely chopped fresh dill and Italian parsley
1/4C finely sliced green onions, white and green parts
sea salt and pepper to taste.

With a mortar and pestle (or a food grinder) grind the sesame seeds into a paste.
Combine the remaining ingredients and mix well. Season with salt and pepper. Chill at least 10 min. before serving.
I grilled various veggies with the salmon and everything turned out great.
It may seem like a long time to leave the salmon cooking, 30-40 min. but it comes out very moist.

That looks so delicious.

We didn't bbq for the 4th. We just got some stuff done around the house and in the garden.

You should give our PChef grilling planks a try. They are really thin so that you can actually roll them around something. But I love them because they are thin enough that I can actually use them on my George Forman Grill!
