I gave instructions on how to poach the perfect chicken.. this is what I did with it.

4C cubed poached chicken (1/2 inch cubes)
1C toasted cashews or pecans
1C celery cut into 1/4" thick slices
2C halved seedless grapes
2Tbsp finely chopped shallots
1/2C mayonnaise
1/2C sour cream
2Tbsp tarragon vinegar
2Tbsp finely chopped fresh tarragon
1/2tsp salt
1/2 tsp black pepper
In a small bowl mix together the shallot, mayonnaise,sour cream, vinegar and tarragon, salt and pepper. Toss the dressing with the remaining ingredients in a large bowl. Serve cold.

Serves 4-6 servings as a main dish salad.
