PERFECTLY POACHED CHICKEN


We learned this in Chris McKone's cooking class on Thursday night. She had a class of Main Dish Salads. She has a recipe for the perfect poached chicken.
Perfect poached chicken:
6 half chicken breasts
1Qt. chicken stock (boxed kind)
1 medium carrot cut into 3rds
1 stalk celery cut into 3rds
1/2 onion
Bring the stock, carrot,celery and onion to a boil. Add the chicken breasts and simmer for 3 minutes. Take the chicken breasts off the stove and let sit for 20 min. Take the chicken out an put on a plate to cool. Refrigerate the chicken breast for use in the Chicken Salad w/grapes (to come). Strain the stock and refrigerate or freeze for future use.
