FOOD


It seems I've gotten away from the food thing here with the fires down south and the kids being evacuated and my various rants and raves. Ok here is a recipe for using left over ham..



chop left over cooked ham into bit size pieces
2-3 potatoes sliced thin
one large onion sliced thin
8oz sour cream (opt)thinned with milk to make spreadable
grated cheese.. cheddar or a combo of Cheddar and Jack.

milk
salt and pepper

chop the ham into bite size pieces, set aside, slice potatoes and onions thinly and set aside.
Spray a casserole dish with vegetable spray lay a layer of potatoes on the bottom.
Season with salt dot with sour cream if using. Layer onions and ham and cheese. Sprinkle with a 1 Tbsp or 2 of flour. Keep layering potato, sour cream, onions, ham cheese, flour until all the ingredients are used, ending with cheese. Cover and bake for an hour and a half at 350 or until the potatoes are cooked through.
*If not using sour cream pour 1/4C over all after you finish layering all the ingredients.
Low fat or fat free sour cream and cheese can also be used to reduce the fat and calories.

Leftovers are good with eggs for breakfast.
