Working Saturdays is fun when...

Really! Working Saturdays can be fun & great when the people you work with are great & also when everyone brings good food to share!!!!!! This past Saturday the theme was breakfast burritos...there was ground turkey with pork chorizo for the filling, 2 different homemade salsa, scrambled eggs, cheese & guacamole...we were so full we weren't able to eat lunch but we did make room for Leta's fruit salad with Lime Yogurt...the lime yogurt was delicious & Leta shared the recipe with me & I will share it with you...

My Breakfast Burrito

fruit, lime yogurt & whipped cream
(Breakfast Dessert!)

Fruit Salad with Lime Yogurt
, serves 8
1 large ripe honeydew melon, seeded & cut into 1 1/2-inch chunks
1 pint strawberries, hulled & halved
1 cup blueberries
1/4 cup fresh lime juice
2 1/2 TB sugar
Lime Yogurt
2 cups nonfat plain yogurt
1/4 cup sugar
1 TB freshly grated lime zest
1 TB fresh lime juice
~In a large bowl, toss together the fruits with the lime juice & sugar. Let stand for 15 min., stirring occasionally.
~In a small bowl, combine yogurt, sugar, lime zest & juice, stirring until sugar is dissolved. Cover & refrigerate until chilled.
~Serve fruit salad with lime yogurt.
