TACOS


I know, tacos are no big deal, but these were my rendition of Jimboys tacos. Seriously these were good tacos!

2 tsp oil
11/2 lb ground beef
1/2 an onion finely chopped
1/4 tsp paprika
garlic powder to taste
chili powder to taste
salt and pepper to taste.
corn tortillas
finely grated Parmesan cheese
oil for frying
grated american or cheddar cheese
shredded lettuce
taco sauce


Heat the oil in a frying pan, add the onions and cook until opaque. Add ground beef and cook stirring to break up the meat. Add the seasonings and cook until done. Drain excess grease. Set aside keeping warm.

Taco Shells
Heat about an inch of oil in a frying pan. When hot add the tortilla frying until pliable. Fold the tortilla in half and fry each side until desired crispness. Be sure to leave enough of an opening to put filling into the shells. When done shake off excess oil..do not drain on a paper towel. Dredge both sides in the Parmesan cheese put on a cookie sheet and repeat with the remaining tortillas.
Fill the shells with the meat mixture, cheese and lettuce.
That's it.. Enjoy!
