FRIED RICE- WHAT TO DO WITH LEFT OVERS

Ever wonder what to do with left over rice, bits of vegetables, meat? Make fried rice. All you need to do is put the left over rice (it has to be at least a day old) onto a baking sheet spreading it out. Leave it out to dry out a little, I usually do this in the morning and leave out all day. It is best if you use long grain rice but short grained rice works also, it's just a little stickier.

For basic fried rice:
left over rice, you should have at least a couple of cups
1/2 onion thinly sliced
2-3 slices of bacon diced
left over meat chopped into bite size pieces or Chinese barbecued pork chopped or ham works well
chopped left over vegetable, such as carrots, cabbage, celery etc. almost anything will work
1/2 C frozen peas (opt)
2-3 green onions sliced
2 eggs beaten with a little soy sauce
1-2 Tbs soy sauce or to taste
1-2 Tbs oyster sauce or to taste

fry the bacon until it is beginning to crisp then add the onions and fry together until the onions are cooked. If there is a lot of oil drain all but about 2Tbsp. Add the meat and saute, add the rice and toss everything together. Add the soy sauce and oyster sauce and toss to combine. Add the peas and vegetables and toss. Toss occasionally until everything is heated through.
In separate pan scramble the eggs. Add to the rice and toss to combine. Add the green onion at the last minute. Taste for seasoning.

*This is not a perfect measurement of ingredients. Once again this is my just dump things in dishes so I had to really think about how much of what was going in. So, just keep tasting and adjusting the flavors to suit your taste.

Would this work OK with turkey bacon? I love this idea of throwing leftover stuff together.

it would work great with turkey bacon. My mom would just use bacon and onions mixed with rice and that was good too.
