SUNDAY WITH MARLENA- GALILEE SALAD WITH WILD GREENS,RAW VEGETABLES AND OLIVES

A nice mixed salad to accompany any meal.

serves 4

1 bunch arugula, about 4oz
1 pkg mixed salad greens
1/4 white or red cabbage thinly sliced
1 cucumber sliced
1 small red onion chopped
2-3 garlic cloves chopped
3-5 tomatoes cut into wedges or cherry tomatoes halved
1 bell pepper, any color sliced
2-3 mint springs sliced or torn
1-2 Tbsp chopped fresh parsley, tarragon or dill
pinch dried oregano or thyme
pitted olives
3Tbsp olive oil
juice of 1 lemon
1Tbsp red wine vinegar
salt and pepper to taste

In a large salad bowl, combine the arugula, salad greens, cabbage, cucumber,onion and garlic. Toss gently. Arrange the tomatoes,peppers,olives, mint, dried herbs and salt and pepper over the greens. Drizzle with the oil, lemon juice and vinegar, toss gently and serve.
Serve with yogurt cheese or mash a little feta cheese into plain yogurt and serve.

I just love the name of it..and mashing feta into yogurt sounds perfect as a dressing. Great photo too!
