ASIAN PEAR UPSIDE DOWN CAKE


I finally got around to using a few of those darned Asian Pears.. in fact my box from Farm Fresh to You had 5 of those things in there! I used those Asian Pears. This is an easy recipe
Melt 1/2 a stick of unsalted butter with 1/2 C brown sugar simmer until the butter and the sugar combine. In the mean time peel and slice the pears into 1/4 in slices. Pour the brown sugar/butter mixture into a 9" pan and layer the pears on top.
For the cake you will need:
1 1/2C all purpose flour
1tsp baking powder
1/4tsp salt
1 stick softened unsalted butter
1 c sugar
3 large eggs, 2 separated
1tsp vanilla
1/2 C milk
Whisk flour,baking powder and salt together . Beat together the butter and sugar at high speed until light and fluffy. Add the whole egg and the yolks one at a time beating after each addition. Add vanilla. Beat in 1/2 the flour mixture until combined, add milk and mix, add the rest of the
flour mixture mixing until just combined. Beat egg whites in another bowl with clean beaters until stiff peaks form. Fold the egg whites into the batter. Pour batter over the pears.
Bake 55-60 min. at 350 degrees.
After cake is baked let cool 5 min. run knife around the sides and plate.

Hmm.. guess I could have wiped the plate a little..oh well, home made with all the flaws
